Salsa Especial de Persimo

Ingredientes (Sirve 6)

Las tareas que pueden realizar los niños/as resaltadas en un tono mas oscuro

  • 4 persimos pequeños
  • 1 cebolla roja
  • ½ cucharadita de jugo de lima fresca
  • 5 hojas de albahaca fresca
  • 5 hojas de menta fresca 
  • Pizca de jengibre fresco

Pasos

  1. Lavar y pelar los persimos, luego cortar en cubos de media pulgada.
  2. Pelar y picar las cebollas, luego enjuagar y escurrir
  3. Lavar y secar la albahaca y la menta, luego partir en pedazos pequenos
  4. Lavar y pelar un pedazo de jengibre, luego picar
  5. En un bol, agregar todos los persimos, 2 cucharadas de cebolla, 1,5 cucharadas de jugo de limón, 1 cucharada de albahaca, una cucharada de menta y una pizca de jengibre, mezclar bien y luego sazonar con sal y pimienta
  6. ¡A Disfrutar!

Servir con las patatas fritas favoritas o galletas saladas

Special Persimmon Salsa

Ingredients (serves 6)

Kid -friendly jobs in BOLD.

  • 4 small persimmons
  • 1 red onion 
  • ½ tbs. of fresh lime juice 
  • 5 leaves fresh basil
  • 5 leaves fresh mint
  • Pinch of fresh ginger

Steps

  • Wash and peel persimmons, then cut into half inch cubes
  • Peel and mince onions, then rinse and drain
  • Wash and dry basil & mint, tear into small pieces 
  • Wash and peel a piece of ginger, then mince
  • In a bowl add all persimmons, two tablespoons of onion, 1.5 tablespoons of lime juice, 1 tablespoon of basil, one tablespoon of mint, and a pinch of ginger, mix well, then season with salt and pepper 
  • Enjoy! 

Serve with favorite chips or crackers

Ensalada de Sandía con Menta y Feta

Ingredientes (Sirve 8)

Las tareas que pueden realizar los niños/as están resaltadas en un tono mas oscuro

  • 8 libras de sandía sin semillas, refrigerada (alrededor de 12 tazas de fruta en cubos)
  • 1/2 taza de aceite de oliva extra puro
  • 3 limas enteras, jugosas
  • 1 1/2 cucharadita de sal
  • 3/4 cucharadita de pimienta negra
  • 1 taza de hojas de menta fresca, desmenuzadas en trozos pequeños
  • 1 1/2 tazas de feta, desmenuzado
  1. Cortar la corteza de la sandía, luego cortar la fruta en trozos de 1 pulgada. Coloque trozos en un colador para drenar.
  2. En un tazón pequeño, batir el aceite de oliva, jugo de limón fresco, sal y pimienta negra para crear un aderezo.
  3. Coloque la sandía en un tazón de ensalada grande. Vierta el aderezo y picada de menta sobre la sandía y mezcle suavemente para cubrir. Vierta el feta desmenuzado en el tazón de la ensalada y revuelva suavemente para integrar el queso en la ensalada. Servir.

Watermelon Mint Feta Salad

Ingredients (Serves 8)

Kid-friendly jobs in BOLD.

  • 8 lb. whole seedless watermelon, chilled (about 12 cups of cubed fruit)
  • 1/2 cup extra virgin olive oil
  • 3 whole limes, juiced
  • 1 1/2 tsp salt
  • 3/4 tsp black pepper
  • 1 cup fresh mint leaves, torn into small pieces
  • 1 1/2 cups feta cheese, crumbled 
  1. Cut rind from the watermelon, then chop the fruit into 1 inch chunks. Place chunks in a colander to drain as your chop.
  2. In a small bowl, whisk together olive oil, fresh lime juice, salt, and black pepper to create a dressing.
  3. Place watermelon in a large salad bowl. Pour dressing and chopped mint over the watermelon and toss gently to coat. Pour the crumbled feta into the salad bowl and stir gently to integrate the cheese into the salad. Serve.

A Carrot Serving Carrots

Food Club was very excited to hear that they were going to be serving locally grown fruits and vegetables to the ENTIRE SCHOOL for the special Farmers Market salad bar.

This special lunch put on by the Redwood City School District Child Nutrition Services included carrots being served by a carrot, kumquats being served by a kumquat, and a strawberry serving strawberries!  (There were a few other celebrity fruits and vegetables helping to serve lots of other delicious fruits and vegetables as well).

Adelante students loved all of the delicious fruits and vegetables…

Taste the Rainbow…Carrots!

Carrots aren’t just for rabbits (although Maestra  Cinthya’s rabbit, Rocket, gets to eat the leaves), they are for Adelante students who love a crunchy snack! Food Club members presented and shared these beautiful rainbow carrots with their classmates.  Did you know that just one medium carrot will give you more than enough Vitamin A for the day? (171%!)  Or that the average person eats 17 pounds of carrots every year?  (Maestra Jenna thinks she eats 20!)  We love carrots!

Basil Harvest into Basil Salad

It was time to harvest the basil so armed with knives the Food Club students transformed the leaves into a delicious and nutritious salad.  Did you know there is a Vitamin K?  It helps your blood clot and is good for you bones and basil is full of it!! You can find the recipe for our salad below.

Food Club’s Basil Salad

  • Basil leaves, washed and chopped, about 2 cups
  • Chives, washed and chopped, 10 or less
  • Red Bell Pepper, diced
  • Garlic clove, diced
  • Avocado, cut into cubes
  • Cherry tomatoes, 1 pint, cut in half
  • Red Onion, diced small, about 1/8 cup
  • Olive Oil, 1 tablespoon
  • Balsamic vinegar, 1 tablespoon
  • Salt, pepper, and oregano to taste

Mix it all up and eat immediately.  Optional additions: walnuts, feta, or snap peas from Leo’s lunch box.

Meet our Nutrition Ambassadors!

Audrey:  Hi my name is Audrey I am in 5th grade.   My favorite meal is paiea and any barbecue dish and anything with bacon and cheese.  One of my favorite things to cook is stir fry . My favorite fruits are blackberries and coconut and pineapple and my favorite vegetable is the artichoke. I want to be a nutrition ambassador because I get to teach people why it is good to eat food.

Maxwell: Hello my name is Maxwell and the reason I wanted to be a nutrition ambassador is because I wanted to be able try new foods, and make delicious foods with my friends. I am in 4th  grade and my favorite fruit is the strawberry.  When I’m home I like to prepare different fruits with my mom such as grapes, bananas, and blueberries and we also make quesadillas together.  My favorite meal is chicken with any kind of fruit.

Briseis: Hello my name is Briseis  Velasquez and today I will talk about why I wanted to be a Nutrition Ambassador.  First of all it sounded like so much fun.  Also, I love teaching younger kids about nutrition.  I love eating grapes and I like experimenting with new foods.  I like giving samples to other people because then they will get to eat nutritious things and try something new.

Hola mi nombre es Briseis Velasquez y hoy voy a hablar sobre porque yo quería ser una embajadora de nutrición. Se escuchaba como mucha diversión.  También, me encanta enseñarles a los menores de edad que importante es la nutrición.  Me encanta comer uvas y experimentar con diferentes frutas y vegetales.  A mí, me gusta darles a estudiantes comida porque ellos pueden tratar algo nuevo y saber que importante es la nutrición.

Abbey: Hello my name is Abbey and I wanted to be a nutrition ambassador so I could teach younger kids about eating healthy and having a bunch of fun trying new foods. My favorite fruit is probably mango and I LOVE snap peas. Im in 5th grade and I love to cook homemade mac’ n’ cheese. I also love to make homemade chocolate chip cookies. It’s my pleasure to learn and teach other people about healthy foods and yummy healthy snacks.

Olivia: Hello my name is Olivia, I am in 4th grade and I wanted to be a food club member/nutrition ambassador because I think it will be fun and I want to teach other people about different fruits and vegetables.  On the weekends, in the morning, I like to cook crepes with my dad.  My favorite fruits are cucumbers and mangoes.

Leo: Hello my name is Leo I want  to be in Food Club because I think it will be fun and I want to try new foods and do fun things. I like a lot of foods such as pizza, burritos, hamburgers, and chicken nuggets.

Marlene: Hi my name is Marlene.   I am in 4th grade I want to be in Food Club because it’s fun.   My favorite food is salad, fruits are mango and apple.  I like to cook salad and tortas.

Hola mi nombre es Marlene.  Estoy en 4 grado yo quiero estar en Food Club porque va a ser muy divertido.  Mi favorito comida es enfrijoladas y mi frutas son mangos y manzanas. Lo que me gusta cocinar galletas y ensalada y tortas.

Claire: Hi, my name is Claire and I am in 5th grade. I wanted to be a Nutrition Ambassador because I think that it is important to teach kids about health. My favorite vegetable is cucumber.

Spencer: Hello, my name is Spencer Bergland and I am in 5th grade.   I wanted to be a nutrition ambassador because I wanted teach kids my age and younger about eating healthy.  I love to read, write, draw, run, swim and do math problems.  I have many favorite fruits but above all I enjoy figs, mangoes, kumquats, cucumbers, strawberries, and any fruit scientifically considered a berry.  That is a little about me.

Hola, mi nombre es Spencer Bergland y soy en quinto grado.  Quiero ser un embajador de nutricion porque me quiero ensenar ninos mi edad y mas pequeno de comer mas bueno.  Me gusta leer, escribir, dibujar, correr, nadar y hacer matematicas.  Me gusta higos, mangos, kumquats, pepinos, y fresas, y cualquier fruta científicamente considerados una baya. Esto es un poco de mi.

Ralphy: Hi my name is Ralphy I am in 4 grade. I wanted to be a Nutrition Ambassador because I thouth it would  be fun and I was rite. Being in food club is awesome because I needed to try new kinds of fruits and vegetables. My favorite food is pizza. My favorite fruit is watermelon. I don’t  have a favorite vegetable yet.

Hola mi nombre es Ralphy estoy en cuarto grado. Queria estar club de comida porque se escuchaba divertido. Mi comida favorite es pizza. Mi fruta favorito es watermelon. No tengo un vegetal favorito todavia.

Lilly: Hello my name is Lilly and I am in food club, I am in 4th grade and  I wanted  to be a nutrition ambassador because  I like to try new things and it looks like fun.  My favorite color is blue, my favorite meal is pasta, my favorite thing to cook is cookies, my favorite fruits are strawberries, watermelon, and pineapple ,my favorite vegetable is cucumber.

Reese: Hello my name is Reese and I am in “Food Club” I am in 5th grade and my favorite color is green. My favorite meal is lunch, my favorite thing to cook is anything sweet. My favorite fruit is pineapple and mango, and my favorite vegetable is burnt broccoli. I wanted to be in “Food Club” because I wanted to try new things.

Clarisa: Hi my name is Clarisa and I am in 5th grade and I go to Adelante Spanish Immersion School and love to try new things. I want to be a Nutrition Ambassador because I love to teach young kids about new foods and to encourage them to try new things that they have never tried before. My favorite thing to do is try new try new things and to work with young kids.

Rebecca: Hi, my name is Rebecca and I am 9 years old. I go to school at Adelante Spanish Immersion School and am in 4th grade. I love food, I really do not care what I have in front of me I will just eat anything. I love to be a Nutrition Ambassador because it is really fun, and like I said before I love food and we also get to try new foods. My mom works at Whole Foods Market so she always brings some new foods. In my free time I love to watch cooking shows. So that is me and I hope that kids would love food as much as I do.

Selinda: HI my name is Selinda. I am 8 ½ . I go to Adelante School.  One thing I  love to do is EAT FOOD! I like to eat anything. I want to be a Nutrition Ambassador because you get to try new foods. I am in fourth grade.  My favorite meal to eat is mac and cheese.  My favorite fruit is watermelon and my favorite vegetables are carrots.

Maya: Hi my name is Maya and I go to Adelante and I am 9 and I am in 4th  grade.  I like food club because it is fun to try new things and because you get to show other students different foods.  My favorite fruit is a strawberry.  When I am home I like to make myself a sandwich.  I also like carrots with hummus.
